Stir Fry Eggplant and Coconut Pork

    Khmer has many recipes for egg plant.   But this Authentic egg plant recipe is my favorite eggplant recipes.  Ground pork and egg plant flavoring with coconut milk, a touch of turmeric and shrimp paste.   Very good with rice.  This recipe you can cook with either ground pork, ground chicken or ground turkey.

bulletIngredients :
bullet1/2 lb. Ground pork.
bullet2 Asian egg plants. Peeled and cut in bite cubes.
bullet1 Small cans 5.6 oz Coconut milk.
bullet1 Yellow onion. Chopped.
bullet3 Gloves garlic. Minced.
bullet2 Tablespoons cooking oil.
bullet1 Tablespoon fish sauce.
bullet1/2 Tablespoon sugar.
bullet1 Tablespoon shrimp paste. ( Ka-pik)
bullet1/4 Teaspoon black pepper.
bullet1/4 Teaspoon turmeric powder.
bulletChopped hot chili pepper. To your taste.( OPTION).
bulletProcedures :

Heat cooking pot.  When it hot pour oil.  Sauté garlic, yellow onion , ground pork and fish sauce. Stirs.  Pour coconut milk and add egg plant. Stirs.  Seasoning with sugar , shrimp paste and hot chili pepper. (option) Stirs well.  Cover and simmering till the egg plant done.  Serve hot with rice.
