Copy text from text source and paste into Notepad.

Save segmented source text by clicking on "File" and "Save As..."

The "Save As" menu box appear.  Choose "Encoding" to be "UTF-8".  Leave "Save as type" as "Text Documents (*.txt)" and choose "File name" to be any name you want.
