Kuzi Ayam Kelantan

 

Preparation and cooking time : 45 mins
Serves 6 to 8
Per person : 25 g fat, 1071 kcal (17025 kilojoules)

Ingredients:

  • 15 dried red chilies, soaked

  • 6 red chilies

  • 20g shallots

  • 2 cm ginger

  • 1 sachet Curry Nasi Kandar Mix (Maggi ®)

  • 100g ghee

  • 1 kg chicken, cut into pieces

  • 6 tbsps tomato ketchup (Maggi ®)

  • 300 ml evaporated milk

  • 1 chicken stock cube (Maggi ®)

  • 600 ml water

  • 100g black raisins

  • 600 g fried shallots, sliced

  • 100 g 'kerisek'

  • Coriander leaves

  • Fried cashew nuts

Directions:

1.     Blend ingredients A. Add in Curry Nasi kandar Mix and mix well. Set aside for 20 minutes.

2.     Heat oil and stir fry ingredients A until aromatic. Add chicken pieces and tomato ketchup. Fry for 2 minutes.

3.     Stir in evaporated milk, chicken stock cube, water, raisins, and fried shallots. Bring to boil, simmer gently until chicken is tender.

4.     Stir in 'kerisek', salt and sugar to taste. Garnish with coriander and cashew nuts.
